Pancake batter


  • 1 l milk
  • 150 g caster sugar
  • 3 g salt
  • 500 g cake flour
  • 8 eggs
  • 80 g butter
  • 80 g sunflower oil
  • 80 g cointreau or rum (Optional)


  • For make pancake batter, start break the eggs. Add the caster sugar and the salt, then whisk everything together.
  • Add half of the floor and half of the milk, then whisk again.
  • Add the rest of floor and whisk, then poor the rest of milk.
  • To finish, while whisking, poor the melted butter, the oil and the liqueur Cointreau.
  • The pancake batter is a success. Now, you have to leave it to rest in a refrigerator during 2 or 3 hours.
  • After, preheat a frying pan, poor a bit of oil in it and wipe the frying pan with a paper towel.
  • When your frying pan is very hot, poor a ladle of pancake batter in it and spread the batter everywhere in the frying pan.
  • After one to two minutes, flip the crepe, then cook the other side of the crepe while checking your crepe colour.
  • Redo the same thing until all the pancake batter is used.
